The sun has deserted us today, but summer is on its way, and the spectre of beaches, skimpier clothes and revealing our limbs to the sun begins to loom! Keep calm, and try this weight loss wonder……
This recipe is a fresh and lovely light lunch or snack which feels indulgent, but actually packs us full of incredible nutrients that fill us up and slim us down. As a ‘seed’ vegetable, with a significant proportion of protein as well as carbs, they’re an excellent summer diet staple. The fresher, the better, but until the season properly starts, frozen peas will work fine.
Using peas instead of avocado doesn’t mean that avocados are bad – quite the opposite – but this carries none of the calorific guilt factor of traditional guacamole. Wonderful as avocados are, and as good as the right fats are, this version has some healthy fats in the olive and rapeseed oil, but is higher in natural plant protein. The cumin, coriander, raw garlic, lime and spring onions add a further spectrum of flavours and benefits, making this a real health boost, especially paired with a range of veg crudités to dip. Less calories, huge feel good factor!
Peas are amazing little green gems, and something I grow every year. There’s nothing like shelling your own just-picked pods, even though quite a few end up being eaten raw in the process! As a climber, you don’t even need space in the garden; planting in circles in a pot will do just as well. So, give it a try, and if you can, get growing too for the ultimate real food experience!
Pea Guacamole
350g peas (fresh, or defrosted frozen)
1 garlic clove, crushed
2 spring onions, trimmed and chopped
finely grated rind and juice of 1 lime
1/2 tsp ground cumin
1 tbsp extra virgin olive oil/rapeseed oil (or both combined)
handful of chopped coriander
sea salt and pepper to taste
Put the peas, garlic, spring onions, lime rind and juice, cumin and oil in a processor and whizz until smooth. Taste, season and briefly remix. Chill for 30 mins, then serve. Enjoy! 🙂
